Zesty Sloppy Joe Recipe with Slaw

ZESTY SLOPPY JOE INGREDIENTS:
• 2 Tbsp butter
• 1 cup yellow onion, chopped
• 2 Tbsp chili garlic sauce
• 1 Tbsp fresh ginger, grated
• 1 clove garlic, minced
• 1 tsp salt
• 1 tsp pepper
• 1 pound ground pork
• 1/2 cup hoisin sauce
• 1 Tbsp soy sauce
• 1/2 cup canned fire-roasted tomatoes, drained
• 1 Tbsp lime juice • 4 brioche buns, toasted
COLESLAW INGREDIENTS:
• 2 Tbsp rice wine vinegar
• 1 Tbsp canola oil
• 1 Tbsp sugar
•1 Tbsp kosher salt
• 1 cup carrots, grated
• 2 scallions, thinly sliced
• 1 cup purple cabbage, shredded
ZESTY SLOPPY JOE WITH SLAW INSTRUCTIONS:
1. In a large skillet preheated to medium-high heat, add the butter, followed by the onion, chili garlic sauce, ginger, garlic clove, salt and pepper.
2. Sauté the vegetables, stirring often until they are softened, about 5 minutes.
3. Next, add the ground pork to the skillet, breaking up the pork with a wooden spoon.
4. Cook the pork until it is no longer pink, about 6 minutes.
5. While the pork is cooking, prepare the coleslaw by whisking the rice wine vinegar, canola oil, sugar and salt together to form a vinaigrette. Toss carrots, scallions and purple cabbage together with vinaigrette and set aside.
6. Once the ground pork is cooked all the way through, stir in the hoisin sauce, soy sauce, tomatoes and lime juice. Bring the mixture to a boil and then a simmer over low heat for about 20 minutes, or until sauce has thickened.
7. Once the sauce is at your desired consistency, ladle some of the Sloppy Joe mixture on top of a brioche bun bottom. 8. To give the Sloppy Joe some crunch, finish it off with purple cabbage slaw and top it with the remaining bun.
